Chicken Pasta Delight

3 c rice
2 lb chicken
1 (15oz) can cream of chicken soup
1 can hot water
2 c chopped broccoli
1 1/2 tsp tarragon
1/4 tsp salt
1/2 tsp black pepper
1 1/2 Tbsp cajun seasoning

Put rice at bottom of pan. Combine soup, water, broccoli and seasonings in a large saucepan. Bring to a boil. Let boil about 5 minutes. Place chicken on top of rice. Top chicken and rice with the broccoli soup mixture. Bake at 400 degrees for 1 hour or til chicken is completely cooked and the rice is soft.

Fruit delight

1 (8oz) pkg vanilla pudding
1 (1.4 oz) pkg strawberry jello
1 (15 oz) can fruit cocktail, drained

Mix pudding according package. Add jello and fruit cocktail and mix well. Chill at least 1 hour. Serve chilled and enjoy!


Chocolate Fudge Cake


1 Box - Chocolate Fudge Cake Mix
1 Small Box - Instant Chocolate Pudding
1/2 Cup Hot Water
1/2 Cup Oil
12 oz Chocolate Chips
4 Eggs
8 oz Sour Cream
2 tsp Vanilla
3 Tbsp Mayonnaise

Spray a 9 X 13 inch Cake Pan with PAM or other baking no-stick coating. - Place all ingredients in a large bowl - Mix well, then pour in cake pan - Bake at 350 degrees for 40 minutes - Serve cooled and cut into 2 inch squares - It is rich and a little goes a long way to satisfy any chocolate lover.

Chicken Enchiladas


2 (10.5 oz.) cans cream of chicken soup
1 (15 oz.) jar red enchilada sauce (mild)
8 oz. sour cream
1 pk. corn tortillas (12)
1 1/2 c. grated monteray jack cheese
1 c. grated cheddar cheese (Mix cheeses together)
3 c. cut-up, cooked chicken


In large skillet, combine soup, sour cream, enchilada sauce, and chicken. Heat until warm and well blended. Remove from heat. In small skillet, on medium heat, add 2 tablespoons of cooking oil. Next cook each tortilla 1-2 minutes per side and then place on paper towel. Spray 9x13 dish with Pam and add 1/4c. soup mixture to bottom of pan. Next place approximately 2 tablespoons of soup mix in tortilla along with about a teaspoon of cheese. Roll up and place seam side down in pan. Once all tortillas are filled and placed in pan, pour remaining soup/mixture over tortillas and top with remaining cheese. Bake 30 minutes at 375 degrees or you can heat in microwave for 7-10 or until hot and cheese is melted.

Italian surprize

1lb rotini pasta
1 (15oz) tub Philadelphia cooking creme Italian cheese & herb
1 (15oz) can whole kernel corn, drained
1 1/2 tsp italian seasoning
1/2 tsp parsley
Dash celery salt
1 1/2 - 2 lbs chicken
1 1/2 Tbsp black pepper
1/2 small onion, diced

Boil pasta until tender. Boil chicken until done. Allow chicken to cool. Debone the chicken into bit size pieces. Lightly spray 9x13 pan or a 4 qt casserole dish. In a large bowl combine all ingredients and mix very well. Pour everything evenly into the pan. Bake at 350 degrees for 30 minutes.

Beefy broccoli casserole

1 lb beef chucks, cubed
1 (5.30 oz) box Uncle Ben's whole grain white rice creamy chicken flavored
1 lb chopped frozen broccoli
1 tsp italian seasoning
1 tsp meat tenderizer
1/2 tsp salt
1 C shredded cheese

Cook rice as directed on box. Place in a 1 3/4 casserole dish. Spread beef chucks over rice in dish. Boil broccoli until tender. Add to broccoli and cheese to dish with seasonings. Carefully stir together. Bake at 375 degrees for 30-45 minutes or til done.

Light & Fluffy DR. Pepper Cake
















2 c flour
1/2 c oil
1 1/2 c sugar
2 tsp baking soda
1 tsp salt
1 c soy milk, rice milk or water
1/2 c Dr.Pepper
1 tsp ground allspice

Mix everything well in a medium bowl. Pour batter into a lightly greased 9x13 pan. Bake at 350 degrees for 30 minutes. Cake will be lightly golden brown and toothpick to cake will come out clean.
Cake will be light, fluffy and moist. This was a huge hit with my family. If you want to frost the cake vanilla frosting or cream cheese frosting.


Almond Joy Cookie

3 c flour
1/2 tsp salt
1 c unsalted butter, melted
1 1/2 c packed brown sugar
1/2 c sugar
1 tsp vanilla extract
1/4 c milk
1 c chocolate chips
1/2 c sweeted shedded coconut flakes

Mix all ingredients well. Bake at 350 degrees for 10 minutes or until lightly browned.

Note: Dough is safe to eat raw and taste great in vanilla ice cream to make homemade cookie dough ice cream.

Delicious Simple Vegan Cake


1-1/2 cups flour
1/2 cup oil
1 cup sugar
1-1/2 tsp baking soda
1/4 tsp salt
1 scant cup soy milk/rice milk/water

Mix ingredients and bake at 375°F (190° C) for 30 minutes in a lightly greased pan.

Variations:
Sweet and Light Lemon Cake: 
add 1/4 cup of lemon juice in place of 1-4 cup of the water/soy milk/rice milk

Orange Cake: 
add 1 cup orange juice instead of the liquid and cut back sugar to half a cup

Torte:
cut 1 or 2 apples into slices and lay them on top. You can sprinkle with cinnamon and/or sugar if you like.

Applesauce Spice Cake


1/2 cup molasses
1 cup applesauce
1 tsp cinnamon
1/2 tsp cloves
1 tsp baking powder
1/2 tsp baking soda
1-3/4 cup flour (whole wheat pastry flour is good)
2 tsp ginger (optional)

Combine the molasses and applesauce in a large bowl. Combine remaining ingredients and stir into the liquid. (If the batter seems very dry, add a little more applesauce or a little water.) Bake in a nonstick 8 x 8-inch baking pan or one sprayed with a non-stick spray, in a 350° F (175°C) oven, for 30 to 45 minutes, or until it tests done.

Note: The optional ginger makes an acceptable gingerbread. You can also leave out the ginger and add 3 or 4 tablespoons of cocoa to make a tasty but not very sweet or rich chocolate cake.

Eggless Chocolate Cake

1-1/2 cup flour 
1/3 cup cocoa powder 
1 tsp baking soda 
1/2 tsp salt 
1 cup sugar 
1/2 cup vegetable oil 
1 cup cold water (or ice coffee) 
2 tsp vanilla extract 
2 tsp vinegar



Preheat oven to 375°F (190°C). Use a small brownie-size pan (no greasing required). Mix all the dry ingredients right in pan. Mix all the wet ingredients in separate bowl except the vinegar (important!). Add wet ingredients to dry and stir until all dry ingredients are mixed. Add the vinegar quickly and stir in — immediately put the pan in the oven and bake for 25 to 30 min. Cool thoroughly.

Optional: after you add the vinegar, you can put some frozen cherries, raspberries or cranberries on top of the batter (or you can mix them in beforehand)

Eggless White Cake

7 tbsp. shortening
2 1/2 c. flour
1/2 tsp. salt
1/2 tsp. vanilla
1 c. sugar
5 tsp. baking powder
3/4 c. milk or orange juice


Cream shortening and sugar together. Add the flour and milk alternately. Bake at 375 degrees for 35-40 minutes in small pan.


It is delicious with fruits and ice cream as well.

edible eggless raw cookie dough

2 C all-purpose flour
1/2 t salt
3/4 C unsalted butter, melted
1 C packed brown sugar
1/2 C white sugar
1 T vanilla extract
4 T milk
Any amount of any mix-in you'd like chocolate chips, nuts, or fruit

Mix everything up very well in a large bowl. That's it, enjoy!

Eggless Vanilla Cake

3 c. flour
2 c. sugar
2 tsp. baking soda
Dash salt 
2/3 c. oil
2 tsp. vanilla
2 tbsp. vinegar
2 c. cold water

Mix well. Pour into a lightly greased 9x13 pan. Bake at 350 degrees for 1 hour.

Salsa Rice

1/2 c salsa
1/2 c shredded cheddar cheese
2 c cooked white rice

Add salsa and cheese to rice while hot.

Oven Fried Chicken

1 cup mayonnaise
2 to 3 lbs chicken pieces
4 cups crushed cornflakes cereal
4 tablespoons crushed dried rosemary
3 teaspoons dried sage
3 tablespoons garlic powder
salt and pepper to taste

Coat chicken in mayonnaise. In a large bowl or bag combine last five ingredients. After chicken is coated with the mayonnaise coat well with cornflake mixture. Place in a well greased 9x13 pan and bake at 400 for 1 hour or until juices run clear.

This is a wonderful meal to have regular or flavored mashed poatoes with. Hope you enjoy!

Sugar-Free Vegan Peanut Butter, Oatmeal and Banana Cookies

1/3 cup peanut butter
2 ripe bananas (overripe is fine)
1 tsp vanilla
2 tbsp soy milk
2 tbsp maple syrup
2 ½ cups quick cooking or rolled oatmeal
dash cinnamon (optional)
1/4 cup flour

Preparation:
In a large bowl, mash bananas with a fork until smooth. Add peanut butter, soy milk, vanilla and maple syrup and mix well. Add remaining ingredients and stir until well combined. Drop spoonfuls of dough onto an ungreased cookie sheet and bake 13-16 minutes at 350 degrees, or until done.
 
Note: This recipe is only sugar-free if you use unsweetened peanut butter and unsweetened soy milk.

Stracciatella (Roman Soup)

This is a delicious restorative soup that is easy to make and would be good for anyone that is sick or just getting better.

1 (13 3/4 oz) can chicken or beef broth
1 egg
3 Tbsp grated parmesan cheese
2 tsp basil

In a small saucepan bring the broth to a boil. I used the chicken broth. Meanwhile, in small bowl or cup, with combine remaining ingredients. Beat well until well blended. It will be thick. When the broth reaches a rolling boil, using the fork gently stir in the egg mixture. Serve immediately. Delicious with the extra grated parmesan cheese and without.

This however makes just enough for one person.
