Reese's Brownies

1 cup butter, melted
1/2 tsp salt
1/2 cup cocoa
2 Tbsp vanilla
2 cups sugar
4 eggs
2 cups flour
1 cup peanut butter

Combine melted butter and cocoa, add sugar, then eggs. Stir in remaining ingredients. Bake in glass 9x13" pan at 350 degrees
 for 22-25 minutes.
Frosting:
1/4 cup butter, softened
4 oz cream cheese
3-4 Tbsp whipping cream
1/4 cup cocoa
1 Tbsp water
Approx 1 lb powdered sugar

Beat butter, whipping cream, water, and cream cheese in a bowl on medium speed until fluffy. Gradually beat in cocoa and powdered sugar until smooth. Spread over cooled brownies
.
Topping:
3/4 cup salted peanuts, chopped
1/2 bag small Reese's peanut butter cups, quartered
3/4 cup Peanut Butter chips

Sprinkle evenly over frosted brownies. Enjoy! :)

Lunch Lady Peanut Butter Bars

1 cup sugar
1 cup brown sugar, firmly packed
1 cup butter
1 tsp vanilla
2 eggs
1 cup peanut butter
2 cups oatmeal (not quick)
2 cups flour
1 tsp baking soda
1 tsp salt


ream first 3 ingredients together. Add the vanilla, eggs, and peanut butter and combine. Add the remaining ingredients and mix together. Spread dough on a greased jelly roll pan (18x13x1"). Make at 350 degrees for 15 minutes (until golden brown). While hot spread 1 1/2 cups peanut butter on top. Cool so that the peanut butter has become solid again (I usually throw them in the fridge so they set up faster and so I can eat them sooner!). Spread your favorite chocolate frosting on top and cut into bars.

Here is a delicious frosting recipe for these bars:

1 stick (1/2 cup) margarine, softened
1/4 cup milk
1-2 tsp vanilla (depending on your taste)
3 Tablespoons cocoa (I have never really exactly measured)
2-3 cups of powdered sugar
Mix all ingredients with a hand mixer until smooth and spread on top of bars.

Homemade Nutter Butter Cookies

1 c butter flavored Crisco
1 c creamy peanut butter 
1 c sugar
1 c packed brown sugar
1 t vanilla
3 eggs
3 c flour
2 t baking soda
1/2 t salt
1/3 c milk   
Additional white sugar for rolling 

Filling: 
1 c creamy peanut butter
1/2 c butter, softened
4 c powdered sugar
2 t vanilla
6 Tbs milk
 
Cookies:
Preheat oven to 375 degrees.
Cream shortening, peanut butter, and sugars together until light and fluffy, 1-2 minutes. Add in vanilla, and eggs one at a time. In a separate bowl whisk together flour, baking soda, and salt and add to dough. Mix to combine. Add milk until dough is soft enough to roll into balls without crumbling.

Roll dough into 1/2 inch (or a little larger) balls, roll in sugar, place on ungreased cookie sheet and use a fork to make the design on top.
 
Bake for 6-8 minutes, or until puffy.  You do not want them to be golden brown or overcooked.

Filling: 
Beat peanut butter, butter, sugar, and vanilla together until smooth. Add milk until desired consistency is reached.  When cookies are completely cooled, spread a layer of frosting on one side and sandwich together. 
yield: about 4 dozen sandwiches  

Easy No Bake Peanut Butter Bars

Ingredients1 cup butter melted
2 cups 
graham cracker crumbs (use the boxed kind, or grind them in a food processor. Tiny granules.)
2 cups confectioners’ sugar (aka powdered sugar)
1 cup + 4 tablespoons peanut butter
1 1/2 cups milk chocolate chips

Directions
In a medium bowl, mix together the melted butter, graham cracker crumbs, confectioners’ sugar, and 1 cup peanut butter until well blended. Press evenly into the bottom of an ungreased 9×13 inch pan. (I did mine in a 9X9 square pan because I wanted them thicker) In the microwave, melt the chocolate chips with the peanut butter, stirring every 30 seconds until melted until smooth. Spread over the peanut butter layer. Refrigerate for at least one hour before cutting into squares.

Mini Reese's Pieces Peanut Butter Blondies

Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
1 1/2 cups light brown sugar
2 eggs
4 teaspoons vanilla extract
1/2 cup peanut butter (creamy or crunchy)
1 pkg. Mini Reese's Pieces

Directions:
Preheat oven to 350 degrees.  Line a 9 x 13 baking pan with foil.  Lightly grease the foil with nonstick cooking spray.  In a small bowl, combine flour, baking powder and salt; set aside.  In a large bowl, beat butter and brown sugar together until smooth.  Add the eggs, vanilla and peanut butter and beat until well combined.  Add the flour mixture and stir until just combined.  Fold in the Mini Reese's Pieces.  Scrape the batter into the greased pan and smooth the top with a rubber spatula.  Bake for 30-35 minutes, or until an inserted toothpick comes out clean.  Let cool completely.  Cut into squares and store in an airtight container.

 

Stuffed Pizza Rolls

1 roll refrigerated pizza dough
2 Tbl. grated 
Parmesan cheese
1 Tbl. olive oil or melted butter
1/2 tsp. 
garlic powder
1 tsp. dried Italian seasoning
Mozzarella cheese, diced or grated
Pizza toppings of your choice: ie, ham and pineapple, pepperoni slices, sausage, etc.
Marinara/pizza sauce for dipping

Preheat oven to heat specified on pizza dough package (usually it's 400 degrees).

Unroll your pizza dough onto a lightly floured surface. Pat or roll the dough so it's about 12" by 8". You're going to want to cut it into 24 squares, so just eyeball it if you need to. Use a pizza cutter to slice the dough into 24 squares.
 
Place cheese and desired toppings on each square (Note that you're not putting the marinara sauce on the dough- it's for dipping after). You just need to be able to enclose the toppings in the dough so keep that in mind.

When all of your dough squares have cheese and toppings on them, carefully lift up each square and wrap the dough around the toppings. Pinch to make sure each ball is sealed shut and then place them seam side down in a lightly sprayed pie pan (or similar sized dish).

Brush the tops of the dough balls with olive oil or melted butter (I've used both and there's not much difference in result) and then sprinkle with the garlic, Italian seasoning and Parmesan cheese (I mixed all of these together and then sprinkled on top).

Cook them in the oven for about 15-20 minutes or until golden brown on top. Keep an eye on them! Doughs vary, so I'd check them after even 10 minutes.

Serve warm with warmed marinara sauce on the side for dipping.

Pepperoni Pizza Pull-Apart Bread (a.k.a. Monkey Bread Pizza)

Ingredients:-3 cans refrigerated biscuits (each cans should have 10 biscuits)
-1 (24-26 oz) jar of your favorite spaghetti sauce (we love Prego Traditional)
-1 (6-8 oz) package of pepperoni
-2 cups shredded mozzarella cheese
-1 teaspoon Italian seasoning
-Other favorite pizza toppings: green peppers, olives, onions, cooked ham, cooked sausage, etc


Preheat oven to 350 degrees. Open canned biscuits and cut into quarters and place into a large bowl. Pour spaghetti sauce on top of biscuit pieces and add Italian seasoning. Mix all together. Then add about 3/4 of the pepperoni pieces (reserving 1/4 to put on top) and 1 cup of cheese and stir well. Pour the pizza pieces into a greased 9x13" baking dish. Sprinkle remaining cheese, pepperoni, and other toppings on the top of pizza. Place in the oven and bake for 25-30 minutes or until the biscuits are fully cooked. They will be slightly firm when you press down on them.
