Asparagus Supreme


2 Tbsp butter

1 C Milk

1 clove garlic

1/2 lb crab meat, chopped

2 pkg frozen asparagus spears, cooked & drained

salt & pepper

baking spray

1/2 C Cheese Nix crackers, broken up

4 oz shredded cheese



Cook butter & garlic in saucepan. Blend in salt and pepper. Cook til bubbly. Gradually add milk, stirring til blended. Cook for 1 minute. Remove from heat; add cheese & stir til melted. Spray bottom of pan then add asparagus & crabmeat. Pour sauce over asparagus & crab. Sprinkle with cracker crumbs. Set in a 350F oven for 25 minutes or til thoroughly heat.

This is one of my mother's favorite recipes.

Taco Pasta Casserole


1/2 lb. shell pasta

2 lbs. shredded Colby jack cheese

1/2 C grated parmesan cheese

1 lb. ground beef

1 pkg taco seasoning mix

1/2 C water

1/4 C chopped onion

1/2 C diced tomatoes

24 whole olives

Cook pasta til tender. Drain and place in a 9 x 13 pan. Top pasta with Cheeses. Cook the ground beef til done, and then add water and seasoning mix. Top cheese with onion and tomatoes. Place taco meat on top of tomatoes. Top with more shredded cheese then olives. Bake at 350 for 25 minutes.

This will make between 4 to 6 servings.

Avocado Cream

2 green onions, chopped
chopped garlic
1 avocado softened with fork
2 Tbsp sour cream
1 juice of lime
1/4 c cilantro, chopped

Mix together and serve with Mexican food or chips.

Note: This can be used in place of gaucamole. This recipe is more like a dip.

Cheesy Bacon Wrapped Meatloaf



2 pounds ground beef
2 eggs
2 tablespoons ketchup
1 cup dry bread crumbs
1 tablespoon Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon ground black pepper
1 small yellow onion, diced
6 slices bacon
8 ounces sharp Cheddar cheese, cut into quarters
1 tablespoon ketchup


Preheat an oven to 375 degrees F (190 degrees C).
Combine ground beef, eggs and 2 tablespoons of ketchup in a large bowl. Mix well, then add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. Set mixture aside. Line the bottom of a 9x13 inch pan with bacon, widthwise. Place half of the meat mixture across the top of the bacon. Lay 3 of the 4 pieces of Cheddar cheese across the center of the meat, lengthwise. Cover the cheese with the second half of the meat mixture and mold the meat into a loaf shape. Pull the ends of the bacon up and around the loaf. Spread 1 tablespoon of ketchup thinly over the loaf.
Bake in the preheated oven until no longer pink in the center, about 60 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Remove from the oven.
Cut the final piece of Cheddar cheese into slices and place on top of the meat loaf. Return the meat loaf to the oven and continue baking until the cheese is melted, about 5 minutes. Remove from the oven and allow the meat loaf to rest for 5 minutes before serving.

Oven Fried Chicken


3 to 4 pounds chicken parts
1/4 cup flour
1 teaspoon paprika
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup butter or margarine
Preheat oven to 425°. Wash chicken and pat dry with paper towels. In a pie pan, combine flour, paprika, salt and pepper. Coat chicken with the flour mixture. Put butter in a shallow baking pan; place in oven to melt. When butter is melted, arrange chicken in the baking pan in a single layer, skin side down. Bake at 425° for 30 minutes; turn and bake 15 minutes longer, or until chicken is tender and done.

serves 4.

Note to make spicy chicken you can add 1 1/2 tsp cajun seasoning and 1 1/4 tsp cayenne powder to the dry ingredients.
